Toto is a restaurant with inventive, locally sourced, and seasonal cuisine, led by Chef Thomas Troisgros in Ipanema, Rio de Janeiro. With a contemporary approach, the project aims to provide an inviting atmosphere with a universal identity that reflects the aesthetic and cultural influences brought by the customers. Overall, the inspiration comes from a movement known as "bistronomie," which seeks to combine high gastronomy with the intimate and informal ambiance characteristic of traditional bistros.

Built from scratch, the project was developed for the segment "Fazendo o bem, sem olhar a quem" on the Domingão com Huck program, broadcasted by Rede Globo. The charitable activity, started during the Covid-19 pandemic, relies on food donations. The initiative takes place once a week, serving approximately 600 people who receive soups and basic food baskets.

Tapí, which began operations with a food truck, migrated to the physical store with the challenge of planning the combination of Brazil’s regionalism (north/northeast) with cosmopolitan aspects of a young and sophisticated brand. The client wanted a low-cost project in Rio de Janeiro’s urban scenarios without leaving aside artifice of the origin of its raw material food – tapioca (a starch extracted from cassava root). The research considered colors and textures - from the way food is prepared for the region's aesthetic traits.

Overall, the challenge was to transform traditional sunglasses and eyeglasses sales to new perspectives of product exposure and customer-production approach. As crucial as the conceptual design, the cost of the work was the guiding line for most architectural decisions. The estimated starting price for each square meter of work should correspond to 60% less than the average market cost.
